Cutting Edge 101 Essential Knife Skills to build Kitchen Confidence

Foundational knife skills, slicing dicing, grating, & peeling and kitchen cleanliness. 

  • The primary skills and knowledge the participants will gain by the end of the series will be focused attention as one’s knife skills improve, confidence, creativity and trust in one’s intuition. 

  • Hands-On Knife Practice with Real-Time Feedback

    Start with setting up the cutting board followed by a brief discussion about the ingredients & tools we’ll be working with. Then into a close up demo of each essential knife skill, then guide the participants as they practice the cuts individually as I give real-time feedback  and small adjustments on their grip, angle, and speed which can make a huge difference in how they advance with this new skill.  Then back to a wide shot which will be much more interactive as we get into the specific cooking technique(s) to set expectations for a dynamic learning experience.

    We’ll make Carrot, Apple, Ginger soup.

Different knife skills will be demonstrated and taught as well as ingredient selection & spices in a very personal and personable way

    • Vegetarian French Onion Soup in one pan - slicing onion & making a roux.

    • Creamy, savory, Hungarian mushroom soup. - Specific knife skills & Seasonings

Curry, Stir-fry and Tagine

Working with common cultural spices, sauces & ingredients

  • The primary learning goals of this workshop will be to learn more knife skills and working with different cultural spices, sauces & ingredients.

  • Video demo & interactive

    • Chinese Stif-Fry -No fail, making rice. Working with Tamari, garlic, scrambled egg, scallions

  • To come up with a three course Signature dish that represents one's multi faceted personality.

  • 30 min. discovery/consultation call & a Three Tarot card spread reading to ascertain ingredients that best represent you from which a three course menu will be designed and then instruction on how to make each of these courses. 

    This course will run over four weeks.
